Avocado: The Friendly Fat

How to Cut an Avocado

1. Cut the avocado in half lengthwise around the pit. A chef’s knife is the best choice for this task.

2. Gently twist the two halves in the opposite direction if you find the flesh clinging to the pit.

3. Remove the pit by bringing the knife forcefully down into the pit. Then twist the knife slightly to loosen and lift the pit out of the avocado.

4. Gently remove the skin with your fingers or a knife, starting at the small end. Or you can scoop out the flesh with a spoon.

5. Once cut, avocados don’t keep more than a day. Brush with lemon juice and put in plastic. Or freeze pureed avocado with a tablespoon of lemon juice per fruit for up to five months.
