What to look for when buying asparagus: Choose bright green spears with closed, firm tips. Avoid stalks that are very thick or very thin. Seasonal: March–June.
Storing: Keeps 4 days in the refrigerator. Snip a little off the bottom ends of the bundle and store upright in water in the refrigerator.
Using: Don’t cut; snap to trim stalks. Hold a stalk in your hand and bend the bottom half until it breaks. Steam 4–8 minutes.
