Top Heart-Health Vegetables: Bok Choy

Benefits: Vitamins B6*, C, and K; calcium; fiber

What to look for when buying bok choy: Look for crisp leaves as white as possible. Available year-round.

Storing: For best flavor, use within 3–4 days; stays fresh in a plastic bag in the refrigerator for a week.

Using: Use bok choy stalks in place of celery and the leaves in place of lettuce.

*Low levels of B6 are associated with increased C-reactive protein, also a marker for heart disease
