Facing a gargantuan restaurant menu full of creative culinary delights can make any healthful eater buckle. But there’s hope. Learn to navigate any menu nutritiously using insider tips from chefs.
“It’s really hard being around food all day, especially with my sweet tooth,” says Bob Millhoff, executive chef at Yanni’s in Milwaukee.
“I know what I should eat, but it’s not always what I want to eat,” says William “Bo” Kozak, a retired chef in Minneapolis. “I do better some days than others.”

“If you eat properly at home, you’ll have a head start when it comes to making wise selections from restaurant menus,” says Chris Smith, known as the Diabetic Chef. Smith, executive chef at Wake Forest University Baptist Medical Center in Winston-Salem, North Carolina, offers ideas for sensationally flavored yet sensible foods in his cookbooks and cooking classes. “Whether you’re eating out or cooking at home, follow your meal plan and remember portion control,” he says.
