Quinoa and Curried Shrimp
Quick-cooking quinoa is a good source of iron and calcium. This spicy curry has just a touch of light coconut milk for flavor. 

Rice-and-Veggie-Packed Peppers
Sweet peppers make a tasty container for this version of Spanish rice, but feel free to eliminate the peppers and serve the rice as a side dish. It goes well with chicken or pork.

Salmon with Whole Wheat Pasta
The peppers and tomatoes in this chunky pasta sauce are roasted to concentrate their sweetness. Serve with antioxidant-rich salmon.

Slow-Cooker Wild Rice Soup
Wild rice varies widely, from the long, black cultivated grains to more expensive, mottled-gray grains that are harvested by hand. Generally, cultivated rice takes longer to cook than hand-harvested varieties. Either way, wild rice adds an earthy note to this low-fat soup, which gets a boost from lemon and rosemary.

Winter Wheat Berry Salad
Wonderfully chewy wheat berries have a nutty flavor. They're great in soups, stews, and salads, as well as cooked and eaten as a hot breakfast cereal.
