The Cooking Cardiologist shares his tasty grilling recipes.
>When you hear the hiss of food sizzling on the grill and get a whiff of the smoke -billowing from the meat as it sears, you might be cooking with too much fat, says Richard E. Collins, M.D., also known as The Cooking Cardiologist. “Where there’s smoke, there’s fat,” says Collins, medical director of cardiac rehabilitation and lifestyle programs at South Denver Heart Center in Colorado.
Collins travels the country with a heart-shape spatula and a stethoscope that has a wire kitchen whisk attached to it, preaching the gospel of heart-healthy cooking. Change your eating habits, he says, taking care to focus on fruits, vegetables, whole grains, and other good-for-you ingredients, and you will change your life. Try some of the doctor’s recipes, perfect for summer grilling.
Tip: To add flavor and keep food moist while grilling, brush it with orange juice.
